The Fall 2019 YRK Magazine featured an article about Caputo Brother’s Creamery owners, Rynn and David Caputo, and Attorney Mieke Driscoll. Caputo Brothers Creamery is the only cheesemaker in the United States that creates the fermented curds that can be stretched to make fresh and authentic mozzarella cheese. Creating cultured cheese curds requires finding the ideal balance in acidity between the culture and milk. (unlike the rubbery, factory-produced mozzarella facsimile found at the supermarket). Caputo’s fresh CapoMozz uses real culture and high-quality milk. Rynn and David studied the process in Italy for 1 year before setting up Caputo Brothers in Spring Grove. They currently send their cheese curds all over the country, so that they can be hand-stretched in kitchens and served in the finest restaurants across America.
